The Blue Hawai'i cocktail was invented in 1957 at the Hilton Hawaiian Village in Waikīkī by Harry Yee, then the most celebrated bartender in the islands. A rep from a Dutch liqueur company asked him to feature a new bottle of blue curaçao, and Yee improvised: rum, pineapple juice, sweet-and-sour, a splash of the blue. Four years later Elvis sang it into the cultural canon with the 1961 film, and the drink — and the phrase — became permanent shorthand for the whole mid-century island fantasy.
