Poke (POH-keh) is the Hawaiian word for "to cut," and the dish is one of the islands' most ancient and most evolved. Hawaiian fishermen seasoned the trimmings of their catch with sea salt, limu (seaweed), and roasted kukui nut for centuries before plantation-era Japanese influence introduced shoyu, sesame, and rice underneath. Today "fresh from the islands" means ahi pulled from the longline boats out of Honolulu Harbor that morning, cubed, kissed with shoyu, and disappeared in twenty minutes.
