The word poke means "to cut" in Hawaiian, and the dish predates statehood by centuries — Hawaiian fishermen seasoning ahi trim with pa'akai (sea salt), limu (seaweed), and 'inamona (roasted kukui nut). Honolulu took that ancestral simplicity and stacked the world on top: shoyu poke, spicy ahi, hamachi, octopus, smoked tako, the legendary Tamashiro Market case in Kalihi. The city is, by any honest measure, the poke capital of the planet.
