The Mai Tai was created in 1944 at Trader Vic's restaurant in Oakland, California. Victor Bergeron poured a mix of aged rum, fresh lime, orange curaçao, orgeat, and rock candy syrup for two Tahitian friends, and one of them — Carrie Guild — exclaimed "Maita'i roa ae!" (Tahitian for "out of this world, the best!"). Hawai'i embraced the drink during the post-war tiki boom, and resort bartenders from Waikīkī to Wailea reinterpreted it with local pineapple and dark-rum floats, cementing it as the unofficial sunset cocktail of the islands.
