The Story Behind Shave Ice
Shave ice arrived in Hawai'i with Japanese plantation workers in the late 1800s, a sweet adaptation of kakigōri from the home country — ice shaved so fine it nearly becomes powder. Field hands made it in the cane fields with hand-cranked blocks; today the iconic spots, from Matsumoto's in Hale'iwa to Waiola in Mō'ili'ili, still draw lines around the block. A serious cone is built with a scoop of vanilla ice cream and a handful of azuki beans hidden beneath the snow, with three syrups poured slowly until the whole thing glows.
