Coffee has been planted here since 1828, and the modern industry was built by Japanese plantation families in the 1890s who took over the small farms when the sugar barons walked away. Pick by hand at perfect ripeness, dry the beans in the sun, roast slow — that's the formula that hasn't changed in a hundred years.
