Fresh from the islands — say it like a promise. A real Hawaiian poke bowl starts at the auction block on Pier 38 in Honolulu before sunrise, where longline boats unload ahi still cold from the deep Pacific.

The word poke means "to cut" in Hawaiian, and the original dish was a fisherman's snack: cubed reef fish, sea salt, limu, roasted kukui nut, eaten right at the canoe. Centuries later, plantation-era Japanese, Korean, and Chinese flavors layered in — shoyu, sesame oil, scallion, gochujang, ginger — turning the humble bowl into a national obsession. The version every island kid grew up on is shoyu ahi over hot rice, eaten standing up at the back of the family minivan.
