The Story Behind the Mai Tai
The Mai Tai was invented in 1944 by Victor "Trader Vic" Bergeron, whose tiki bar in Oakland was the laboratory for what would become an entire mid-century aesthetic. The original was simple: aged Jamaican rum, fresh lime, orange curaçao, orgeat (almond syrup), and rock candy syrup, shaken hard with crushed ice. Hawai'i adopted the drink during the post-statehood tiki boom of the late 1950s, and resort bartenders along Kā'anapali and Waikīkī gave it its now-classic float of dark rum and a sprig of mint.
