The Story Behind Poke Bowl

Poke — pronounced "POH-kay" — is one of Hawai'i's most treasured culinary traditions. At its heart, it's simply fresh raw fish — usually ahi tuna — sliced or cubed and seasoned with sea salt, soy sauce, sesame oil, onion, and a generous handful of limu seaweed. It was born as fishermen's food on the docks, a no-fuss way to enjoy the day's catch right off the boat.

Today, poke has conquered the world, but in Hawai'i it remains gloriously, stubbornly local — a scoop of it over rice at a neighborhood market, eaten with chopsticks in the parking lot, is still the best version you'll ever have.
